Not yet 40, our Chef Christophe MOREL is above all else passionate about his craft. Trained at the Hotel School of Thonon-les-Bains, he came of age here at the Hotel baud working along side the legendary Chef André ROUSSEL. Permanently looking for new flavours, new techniques, he also worked alongside several other renowned chefs of the Rhône Alps region. Fortified by these new experiences he came back to his « first love », the Hotel BAUD as Head Chef, and has subsequently became a partner in the business. Two sous-chefs, and a team of 15 cooks work to produce an inventive and colourful cuisine inspired by the seasons and our local fare. Christophe MOREL, discreet and shy, spends many hours in his kitchen. He shuns publicity but if you want to meet him don’t hesitate to knock on his door for a chat.

The first establishment of the Baud family was founded in Bonne in the 1850’s. It became the station buffet with the arrival of the railway line from Geneva to the Alps. In 1958, The old station buffet became a hotel. For two decades, Léonce et Dédé Baud worked tirelessly to turn their establishment into a local landmark. After their retirement Mark Baker et André Roussel continued the tradition. They modernised and enlarged to hotel to its present dimensions, building a new dining room, a new kitchen and a dozen new bedrooms and suites. Their deputies, Christophe Morel and Joel Labrosse took over the running of the hotel in 2007, becoming shareholders in the business on the retirement of Mark and Andre in 2009.
